Apple Pie Egg Rolls

September-November: National Apple Months

All-American apple pie gets an Asian accent when made into egg rolls! We first tried these at a neighborhood social. Fortunately, we live in a culturally diverse county where fusion foods give everyone an opportunity to try a mixed plate of everything ethnic. They are easy to make and can be frozen until ready to fry up for a fast and fabulous fall dessert for family and friends. Crisp like the autumn weather, apple pie egg rolls are delicious during the National Apple Months of September, October and November—and also all year long!

Recipe

Ingredients

  • 1 can apple pie filling
  • package of egg roll wrappers
  • 1 egg, beaten
  • oil for frying
  • cinnamon sugar

Directions

Open a can of apple pie pilling and chop coarsely into smaller pieces. Set aside. Separate the egg roll wrappers. Beat the egg. Moisten the four sides of one egg roll wrapper with the beaten egg.

Scoop about two tablespoonsful of apple pie filling and spread lengthwise onto the bottom third part of the egg roll wrapper. Fold both left and right sides in. Then fold up to cover the apple pie filling.

Roll and press to seal. Place seam side down on waxed paper. Fry immediately or freeze until ready to fry in hot oil until golden brown.

Drain each apple pie egg roll on paper towels. While still hot, sprinkle with cinnamon sugar. Serve with scoops of vanilla ice cream and drizzles of caramel sauce (optional).

Notes

  • Try substituting apple pie filling with other flavors: cherry, blueberry, peach, etc. Chunkier fruit fillings work best for egg roll style pies.

Apple Roses

September-November: National Apple Months

Highlander’s late father and late sister, Nancy Z., and her family lived in Tyler, Texas, the “Rose Capital of the World”. While visiting this East Texas city, we toured the beautiful Tyler Municipal Rose Garden and Tyler Rose Museum. The garden officially opened in 1952 after several years of preparing the grounds. There are 14 acres featuring 35,000 rose bushes and more than 500 varieties of roses. The 7,500 square-foot museum, opened 40 years later in 1992, is located by the garden and showcases Tyler’s rose-growing industry and regal gowns, crowns and memorabilia collected from the annual fall Rose Festival (since 1933).

Inspired by the flowers from Tyler, we made “apple roses”, a dessert using puff pastry and thinly sliced apples. This is a simple and sweet reminder of the town where Highlander’s dad and sister are resting in peace. Apple roses are also appropriate to make during National Apple Months.

Recipe

(Adapted from Puff Pastry)

Ingredients

  • 2 apples (red delicious)
  • 2 tablespoons lemon juice
  • 1 sheet puff pastry, thawed
  • flour
  • 2 tablespoons water
  • 3 tablespoons apricot preserves
  • 3 tablespoons cinnamon sugar

Directions

Fill a large bowl halfway with water. Stir in the lemon juice (this helps prevent the apple slices from browning too much). Wash and dry the apples. Cut them in half down the middle. Discard the core. Cut into paper thin slices (if it is too thick, the slices will not be as flexible when rolling). Microwave for about 3-5 minutes to soften the apples. Set aside.

Unwrap the thawed puff pastry onto a lightly floured clean surface. Use a rolling pin to stretch the dough to a 12×9 inch rectangle. Slice into 6 strips (2×9 inches long). In a small bowl, combine two tablespoons of water with the apricot preserves. Microwave for about a minute. Stir. Brush this mixture on the strips of puff pastry.

Drain the apple slices. Pat dry. Place an apple slice partly above the top edge of the strip. Place another apple slice to overlap with the previous slice. Repeat until you reach the end of the strip. Sprinkle generously with cinnamon sugar. Take the bottom edge of the puff pastry and fold up in half. Carefully roll the strip from one end to the other.

Set in the well of a lightly greased cupcake pan. Continue making the rest of the apple roses. Bake in a preheated oven at 375 degrees for 45 minutes or until the puff pastry is cooked through (see Notes). Remove the apple roses from the pan and let cool slightly on wire racks. Place on plates. Sprinkle with a little powdered sugar. Serve warm.

Notes

  • To prevent the apple skins from burning too much, remove from the oven after 30 minutes and cover loosely with foil. Continue to bake until the puff pasty is cooked through.

Apple Dumplings

September 17: National Apple Dumpling Day

When we lived in Illinois, we would visit the apple orchard at Kuipers Family Farm in Maple Park, and attend some of the fall events there. When we lived in San Antonio, Texas, we took fall road trips with our friends to Lost Maples in Vanderpool then stopped by Love Creek Orchards Cider Mill and Country Store in Medina for a snack. We enjoyed eating desserts at these places made with fall’s quintessential fruit—the apple.

We have several apple recipes on our blog, but here is an easy glazed dumpling dessert we made especially for National Apple Dumpling Day. Apple dumplings are like mini apple pies but when apples are encased in rich puff pastry and served warm à la mode with vanilla ice cream, they become a fancier fall treat!

Celebrate National Apple Dumpling Day, three National Apple Months (September, October and November) and the autumn season with apple dumplings.

Recipe

For the apple dumplings

  • 1/3 cup brown sugar
  • 3 tablespoons raisins
  • 2 tablespoons pecan chips
  • ½ teaspoon ground cinnamon
  • 1 lemon, zest and juice
  • 4 small apples (we used Granny Smith)
  • 1 sheet puff pastry, thawed
  • 2 teaspoons butter (divided into 4 pieces)
  • 1 egg + 1 tablespoon water (for the egg wash), beaten

Directions

In a bowl, combine the sugar, raisins, pecan chips and ground cinnamon. Stir in the lemon zest and juice. Mix till moistened.

Peel, core and slice the apples in half. Unfold the thawed puff pasty onto a lightly floured surface. Roll to about 12 inches square. Cut in quarters (6×6 inches). Place the apples on each square.

Spoon filling into the middle. Place butter pieces on top of the filling. Take the corners of the puff pastry square and fold towards the middle to seal the dumplings. Place them seal-side down on a lightly greased baking pan.

Brush with egg wash. Bake in a preheated oven at 375 degrees F for 30 minutes. The pastry should puff up more, turn golden brown and soften the apples inside. Transfer to a wire rack.

For the glaze

  • 1/3 cup confectioner’s sugar
  • ½ teaspoon lemon juice
  • 2 tablespoons water
  • 1 tablespoon butter

Directions

In a small pan, combine the powdered sugar, lemon juice, water and butter. Simmer over medium low heat, stirring until the butter has melted and the liquid is slightly thickened. Remove from heat. Brush over the apple dumplings. Serve in individual dessert plates with vanilla ice cream (optional).
