French Silk Pie

Scared of salmonella but still want a slice of French silk pie? The classic confection contains raw eggs but we wanted to try a recipe that uses cooked eggs—just to be safe, especially when serving guests whose digestive systems are sensitive (like Islander’s).

French Silk Pie is like a chocolate pudding cream pie but richer and velvety smooth. We chocoholics now prefer it over the latter but the raw eggs made this a rare indulgence.

Cook’s Country adapted Pillsbury’s award-winning original French silk pie recipe by cooking the eggs over a double boiler and increasing the amount of chocolate (we especially liked that part!) for a fuller flavor and deep, dark color. Now we can enjoy this delicious dessert without worrying too much about salmonella poisoning.

For peace of mind, have a piece of French Silk Pie (with cooked eggs in the filling) for National Pie Day.

Recipe

(Adapted from Cook’s Country)

Ingredients

  • 1 baked pie crust (we used Pillsbury brand deep dish frozen crust)
  • 2 cups heavy whipping cream, divided use
  • 3 whole eggs
  • ¾ cup sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla
  • 1 stick (½ cup) butter, softened and cut into chunks
  • 8 (1 ounce each) squares unsweetened chocolate (we used Bakers brand), melted
  • chocolate shavings or curls (optional)

Directions

Brown the pie crust in the oven and let cool. In a large bowl, beat the cream until stiff peaks form. Refrigerate the cream while preparing the other ingredients. In a glass mixing bowl, combine the eggs, sugar and water.

Place over a pot of simmering hot water to act as a double boiler. Avoid scrambling the eggs by immediately beating the egg mixture on high speed until smooth, pale and frothy (about 7-10 minutes or until a thermometer reaches 160 degrees F). Remove the bowl from the double boiler and continue beating on high speed for another 10 minutes or until cool. Beat in the vanilla and softened chunks of butter. Mix in the melted chocolate until smooth.

French Silk Pie

Gently fold in half of the whipped cream until well blended with the chocolate. Pour into the prepared crust. Smooth the top with a spatula. Refrigerate at least three hours or overnight to set until firm. With the remaining whipped cream, fill a pastry bag and pipe decorative swirls over the pie. Sprinkle the top with chocolate shavings or curls (optional). Refrigerate until ready to serve.

Notes

  • Substitute one cup of the whipped cream for Cool Whip non-dairy whipped topping. Cool Whip is smoother and light but firm for piping the decorations on pies.
  • Substitute unsweetened baking squares for semi-sweet for a sweeter French Silk Pie.
  • Substitute the store-bought pastry pie shell for a homemade recipe.

How much is too bitter in bittersweet chocolate for your tastes? When we sampled chocolates at a store a long time ago, we tried white chocolate (0%)* to unsweetened chocolate (100%) and others in between. The percentages reflect how much cocoa mass is included in the chocolate. The higher the percentage, the more intense and darker the chocolate. That percentage is lowered by the amount of sugar and dried milk solids added to the chocolate. Also, different manufacturers classify the percentages differently and label their chocolates as bittersweet, semi-sweet or extra-dark.

Highlander can tolerate up to 85% in his chocolate but that tastes too bitter for Islander. She prefers hers no more than 70%. So that is the chocolate percentage she used when baking bittersweet chocolate cheesecake cups (although she did drizzle the tops with a 54% chocolate to add a little sweetness and color contrast).

Try sampling the variations of chocolate percentages and see how high you prefer your bittersweet tooth. Then use that percentage to prepare bittersweet chocolate cheesecakes cups in celebration of Bittersweet Chocolate Day.

Recipe

Ingredients

  • 4 ounces bittersweet or semi-sweet chocolate (choose your percentage preference), melted
  • 8-ounce block of cream cheese, softened
  • 1/3 cup sugar, granulated white
  • 1 egg
  • 1 ounce/square of semi-sweet or milk chocolate, melted

Directions

In a microwave-safe bowl, break the bittersweet chocolate into small pieces. Melt according to the manufacturer’s directions. Stir until smooth. Set aside to cool slightly. In a mixing bowl, beat the cream cheese with the sugar.

Stir in the melted chocolate until well-incorporated. Add the egg to the batter. Scoop into a muffin tin lined with six cupcake papers.

Bittersweet Chocolate Cheesecake Cups

Bake in a preheated oven at 300 degrees F for 15-18 minutes. The bittersweet chocolate cheesecake cups will bake up smooth and shiny with a soft-set center. Remove from the oven and place on a wire rack to cool completely. Cover with plastic wrap and chill in the refrigerator to set. Melt the chocolate square according to the manufacturer’s directions. Use a spoon to drizzle back and forth over the cheesecake cups. Or place melted chocolate in a pastry/plastic bag with a small round tip/opening to decorate with drizzles.  Yield: 6 bittersweet chocolate cheesecake cups.

Notes

  • *White chocolate is technically not included in the traditional percentage ratings because it does not have cocoa solids. However, it has a cacao percentage from cocoa butter ranging from 38%-41%.
  • A variation of this recipe includes adding an Oreo cookie or chocolate wafer in the bottom of the muffin cups before pouring in the batter as a textured base for a mini pie or tartlet-like deesert.

December 29: National Chocolate Day

Two consecutive days in December are dedicated to chocolate! So baking a double chocolate rum cake to celebrate National Chocolate Day is twice as nice. The cake contains chocolate powder and chocolate chips; its sweetness is balanced by the booze (rum). It is frosted with a basic chocolate buttercream and decorated with drizzles. There is both chocolate in the batter itself and, with the use of chocolate buttercream and chocolate ganache, the ingredients make for a doubly delightful rum cake! We added chocolate dipped strawberries with a white chocolate decoration as well for more more more chocolate! Chocoholics like us like our chocolate cakes this way to celebrate National Chocolate Day!

Recipe

(Adapted from The Cake Mix Doctor by Anne Byrn)

For the double chocolate rum cake

  • 1 package (18.25 ounces) devil’s food or chocolate cake mix (we used Duncan Hines brand)
  • 1 package (3.9 ounces) chocolate instant pudding mix
  • ½ cup rum (we used Bacardi brand gold rum)
  • ¾ cup water
  • ½ cup vegetable oil
  • 4 eggs
  • 1 cup semi-sweet chocolate chips

Directions

Line two 8-inch round pans with wax paper and mist the bottom and sides with cooking spray. Set aside. In a large mixing bowl, combine the cake and pudding mixes. Pour in the rum, water and oil.

Add the eggs. Mix well until the batter is smooth. Fold in the chocolate chips. Divide the batter between the two prepared pans. Bake in a preheated oven at 350 degrees F for 50-55 minutes, testing for doneness with a toothpick. Remove from the oven and cool the cakes in the pan over a wire rack for about half an hour. Transfer one layer to a cake board or platter. Set aside the other cake layer.

For the chocolate buttercream frosting

  • 1 stick (½ cup/8 tablespoons) unsalted butter, softened
  • 2/3 cup unsweetened cocoa ppowder
  • 3+ cups powdered sugar
  • 1/3 cup whole milk
  • 2 teaspoons vanilla
  • ¼ teaspoon salt

Directions

In a large mixing bowl, cream the butter with the cocoa powder. Gradually add the powdered sugar with the milk, vanilla and salt. Beat until fluffy, thinning with a little milk as necessary until the frosting is of spreadable consistency.

Spread the frosting on top of the first layer of the cake. Place the second layer of the cake on top. Add more frosting and smooth it out on the top and sides until covered.

For the chocolate ganache drizzle

  • 4 ounces/squares semi-sweet chocolate (we used Baker’s brand)
  • ½ cup heavy whipping cream

Directions

In a microwave-safe bowl, place the chocolate with the whipping cream. Heat on high for about a minute. Remove from the microwave and stir. Heat again in 15-30 second intervals until the chocolate is melted. Mix well. Cool for five minutes.

Fill a pastry/plastic bag with the ganache. Use a small round tip (tip 4 or 5) or cut a small hole in the plastic bag and squeeze the ganache from the edge of the cake. Allow the ganache to drizzle down on the sides. Let cool completely.

For the chocolate-covered strawberries

  • 3-4 whole strawberries, washed and dried, room temperature
  • leftover chocolate ganache or melted semi-sweet chocolate
  • ¼ cup white candy melts/wafer or melted white chocolate

Directions

Dip the bottom and side of a strawberry in semi-sweet chocolate. Place on wax paper to set. Continue dipping other strawberries. When set, fill a pastry/plastic bag with melted white chocolate. Use a small round tip (tip 2 or 3) or cut a small hole in the plastic bag and drizzle the white chocolate back and forth over the chocolate-covered strawberries. Let cool to set. Garnish the top of the cake. Chill until ready to serve. Slice into wedges and indulge.
