We have prepared pies many times before. Some involve several steps while some, like this Jell-O Dream Pie, are super simple, especially for last-minute occasions. The basic recipe below is brand-specific, but it is a dream dessert for those who like to be creative with a combination of crusts, flavors and toppings. Recipe

Ingredients

  • 2 envelopes Dream Whip whipped topping mix
  • 2 ¾ cups cold milk, divided use
  • 1 teaspoon vanilla
  • 2 packages Jell-O instant pudding mix (any flavor)
  • 1 9-inch pie crust (graham cracker, chocolate or shortbread)

Directions

In a large mixing bowl, beat the Dream Whip packages with one cup of milk and vanilla until thick and peaks form. Pour in the rest of the milk.

Jell-O Dream Pie

Add the packages of Jell-O instant pudding. Beat on low speed then increase to high speed and beat until light and fluffy, scraping the bottom and sides of the bowl. Pour into the pie crust and smooth the top. Refrigerate for at least an hour or until firm. Decorate as desired (we piped extra whipped topping using Wilton’s drop flower tip 2D and garnished with vanilla beans to indicate the French vanilla pudding flavor). Slice into wedges and serve chilled.

Notes

  • We used French vanilla pudding flavor with a graham cracker crust for this particular blog post. But feel free to experiment with a combination of the crust and favorite pudding flavors, like a chocolate crust with chocolate filling.
  • For a simple serving, add a dollop of whipped cream on top of a slice of pie.
  • For a fancy garnish, decorate the top of the pie with chopped nuts, chocolate drizzles/curls/chips, cherries, sliced bananas, toasted coconut flakes, mint leaves, citrus peels, etc.
  • Dream Whip is the dry mix equivalent of Cool Whip non-dairy whipped topping. A cup of real whipped cream may be substituted for Dream Whip and Cool Whip for a fuller flavor. Prepare one packet of Dream Whip (optional) or use Cool Whip (like we did) to pipe the decorative drops on top of the Jell-O Dream Pie.

November 29: National Lemon Cream Pie Day

Islander loves the lemon fresh taste in cakes. So naturally she likes them in pies, too. Although pumpkin, pecan, apple and sweet potato pies are popular during the current season, lemon cream pie is a nice alternative. The sweet-tart citrus flavor, smooth velvety texture and fluffy whipped cream topping bring to mind sunny and warm days. Make someone’s upcoming holidays happy with a pie and make lemon cream pie on National Lemon Cream Pie Day.

Recipe

For the lemon pie

  • ¾ cup fresh lemon juice (5-6 lemons)
  • 4 eggs
  • 1 cup sugar
  • ½ cup sour cream
  • ¼ teaspoon salt
  • 1 pie crust (we used a graham cracker crust)

Directions

Juice the lemons and set aside. In a large bowl, beat the eggs with the sugar. Stir in the sour cream. Add the lemon juice.

Mix in the salt and blend well. Pour into the pie crust. Place on a baking sheet. Bake in a preheated oven at 350 degrees F for 30 minutes. The middle of the filling will still jiggle slightly. Remove from the oven and set on a wire rack to cool completely. Prepare the cream topping.

For the whipped cream topping

  • 1 ½ cups heavy whipping cream
  • ¼ cup sugar
  • lemon peel curls (optional garnish)

Directions

In a mixing bowl, whip the cream with the sugar until stiff peaks form. Spread on top of the lemon cream pie. Or fill a pastry bag with a decorating tip and pipe designs on top of the pie. Garnish with lemon peel curls (optional). Chill the pie for at least another hour before slicing and serving.

Notes

  • If using a frozen pre-made pie shell, bake it in the oven according to the directions on the package until golden brown. Cool before filling.
  • Do not worry if the lemon filling cracks during baking. They will be covered in cream and still taste delicious.
  • The cream topping ingredients yield a generous amount. Feel free to half the recipe to cover/decorate the lemon cream pie.

Banana Cream Pie

March 2: National Banana Cream Pie Day

As the winter season marches toward spring, get a taste of the tropics year-round with a banana cream pie. The bright yellow bananas bring a cheery hue to the winter blues! The sliced fruit on the bottom adds a natural balance to the sweet pudding filling of this delicious dessert. Whatever the season, eat this tropical treat for National Banana Cream Pie Day.

Ingredients

  • ½ – ¾ cup sugar (we used less)
  • 1/3 cup flour
  • ¼ teaspoon salt
  • 2 cups milk
  • 3 egg yolks, lightly beaten
  • 1 teaspoon vanilla
  • 2 tablespoons butter
  • 1 pie crust (we used Keebler brand graham cracker flavor)
  • 2-3 bananas
  • whipped cream to garnish (we used Cool Whip)

Directions

In a saucepan, combine the sugar, flour and salt. Stir in the milk. Heat over the stovetop on medium until thickened, at least five minutes.  Drop a small amount of this mixture into the egg yolks and stir. Place all of the egg yolks back into the saucepan with the mixture and bring to a gentle boil. Cook about two minutes, stirring well.

Banana Cream Pie

Remove from heat and add the vanilla and butter. Mix well. Slice the bananas and layer them on the bottom of the pie crust.

Spread the pudding mixture over the bananas and smooth with a spatula. Cool at room temperature over a wire rack for an hour. Refrigerate to set. Fill a pastry bag with whipped cream and decorate as desired. Slice and serve chilled. Garnish with additional banana slices (optional).
