October 18: National Chocolate Cupcake Day

Although 2020 turned out to be a crappy year due to the coronavirus, it gave us all some extra time to reflect on the positive things in life and appreciate what we do have…like our health. We thank God that we have not contracted COVID-19 and that all of our medical test results were normal (including a negative result for the coronavirus).

To celebrate passing her poop test (Cologuard), Islander made chocolate cupcakes and decorated them as the popular emoji. They are perfectly paired with our toilet paper cake and are a fun food for National Chocolate Cupcake Day.

Recipe

For the chocolate cupcakes

For the chocolate buttercream frosting

  • ½ cup (1 stick) butter, softened
  • 2-3 tablespoons cocoa powder
  • 3 cups powdered sugar
  • 2+ tablepoons whipping cream

Directions

Bake chocolate cupcakes, cool and set aside.

Make the chocolate frosting. In a mixing bowl, cream the butter until smooth. Add the cocoa powder and beat until well blended. Gradually add the powdered sugar. Thin to piping consistency with whipping cream.

Fill a piping bag outfitted with a large round decorating tip. Pipe swirls on top of the cupcakes, starting from the bottom and squeezing to layer up to a tip. Roll out white fondant to 1/16 inch-thickness. Use ½-inch round decorating tip to cut circles. Slice in half to make the mouth. Position the mouth on the cupcake. Finish decorating the cupcake with candy eyes. Refrigerate to set the frosting. Bring to room temperature to serve.

November 11: Remembrance Day/ Jour du Souvenir (Canada)

Canada, Highlander’s birthplace, and other Commonwealth countries observe Remembrance Day/ Jour du Souvenir on November 11, the same day the U.S.A. honors its war veterans and military personnel. Remembrance Day is their version of America’s Memorial Day. The Remembrance Day symbol is a poppy flower, as mentioned in John McCrae’s poem, “In Flanders Field”. The lieutenant colonel from Canada was moved to write it for a friend’s funeral during World War I.

For a Remembrance Day prayer gathering, we were inspired to use the iconic flower for a delicious dessert—lemon poppy seed cupcakes topped with fondant poppies. It was an appropriate tasty treat to remember the brave ones who sacrificed their lives to protect their countries. God bless their souls!

Recipe

For the fondant poppy flowers

  • Powdered sugar (for dusting the work surface)
  • Red fondant
  • Black tube frosting
  • Poppy seeds

Directions

On a surface that has been dusted with powdered sugar, roll out red fondant to 1/8 inch thick. Cut out poppies using a 5-petal flower cutter. Use the impression/veining tool and press to give texture on each petal. Place the cut fondant poppy on a foam pad and lightly press down the center with the ball tool.

Lemon Poppy See Cupcakes

Place fondant poppies on flower formers and let dry for about 3 hours or overnight. Dot the centers of each poppy with black icing. Sprinkle poppy seeds on the middle, brushing away the excess from the center. Set aside to dry.

For the cupcakes and frosting

Directions

Prepare the batter for the lemon buttermilk poppy seed cake. Scoop into red cupcake papers. Bake and cool completely on a wire rack.

Make the lemon buttercream icing (do not tint it yellow). Frost the cupcakes (we used Wilton tip 1M to make the swirls).

Position a fondant poppy seed flower on the top center. Serve at room temperature.

December 15: National Cupcake Day

Somewhere over the rainbow—and maybe somewhere closer—rainbow cupcakes are making people smile! Who could resist the colorful confetti in the cake batter, the bright blue sky frosting, the fluffy marshmallow clouds and the sweet-sour strips of chewy candy? We made these rainbow cupcakes for a “Wizard of Oz” themed party and they surely made everyone smile! Some people did not even want to eat them because these Technicolor treats looked so cute. For National Cupcake Day, decorate something over the top and over the rainbow and make rainbow cupcakes!

Recipe

Ingredients

  • Cupcakes (we used a confetti cake mix)
  • Blue frosting (we tinted a tub of vanilla frosting with blue food coloring)
  • White tube frosting
  • Mini marshmallows
  • Rainbow candy strips (we used Airheads Xtreme Rainbow Berry brand)

Directions

Bake cupcakes as directed on the box package. Cool completely. Frost the tops with blue frosting.

Rainbow Cupcakes

Cut the rainbow candy strips in half. Use the white tube frosting to pipe some clouds to secure the strip and marshmallows. Arch the rainbow candy strip into the white frosting. Complete the cupcakes by hiding the edges of the strip with mini marshmallows.
